Preheat oven to 220℃. Rub the beef all over with olive oil and season generously. Place the beef in a large roasting tray (you may put some garlic & onion underneath if you wish). Place it in the oven, turn the heat down to 190℃ & cook for 15 minutes per lb for medium or as desired. Use the juices in the pan to make delicious gravy!
