Remove the beef from the fridge 1 hour before cooking so it warms to room temperature. Preheat the oven to 220°C.
Rub the beef all over with olive oil and season generously with salt and pepper. Place the beef, skin side up, in a large roasting tray (you may put some chopped garlic & onion underneath if you wish). Place the beef in the oven and roast for 10 minutes before turning the heat down to 180°C. Roast for a further 70 minutes for medium or as desired.
When cooked remove the roast from the oven, cover with foil and leave to rest for 20 minutes before serving. The cooking times will vary depending on your oven and how you like it cooked.
Remove film, pour olive oil over veg, mix gently & place in the oven when you remove the beef to rest. Roast for 20-25 mins. The vegetables should be tender before serving.

Pour the gravy into a small saucepan and heat gently until simmering and serve.
